Foodie Call Benefit for CWT

The Foodie Call is a local catering and food delivery company inspired by and creating delicious international comfort food. Well known for their traveling supper clubs, chef Matt McClusky is turning his creative skills to cooking up a scrumptious benefit for Colorado Water Trust.


This Foodie Call is focused on the creole cuisine of New Orleans.  Creole cuisine in New Orleans is a combination of the cuisines of the native inhabitants (cajun, african-american, spanish, french, italian, native american) with a more classical technique bent than the closely-related cajun cuisine.  We will be serving up a generous selection of New Orleans favorites along side a traditional Dixieland jazz band … it’s going be a night full of good food, good music, and good people.

Appetizers

*  Oyster Gougères—golden puffs served with cocktail sauce
*  Mini Muffaletta Sandwiches—marinated olive salad, Italian meats and cheeses
*  Shrimp Rémoulade—seasoned broiled shrimp and creole rémoulade
Main Course
*  Chicken Creole—chicken stewed in a tomato white wine broth
*  Tilapia with Crawfish Andouille Stuffing—served with creole meuniere sauce
*  Red Beans and Rice—the New Orleans classic with smoked ham
